Vietnamese Shrimp Banh Xeo
A classic Vietnamese dish, Banh Xeo is a crispy rice flour pancake filled with shrimp, pork, and bean sprouts. This recipe is a delicious and easy-to-make adaptation of the original.
Ingredients
- β2 cups rice flour
- β1 cup wateradjust to achieve pancake batter consistency
- β1 pound shrimppeeled and deveined
- β1/2 pound intricately seasoned pork
- β1 cup bean sprouts
- β1/4 cup coconut milk
- β2 tablespoons veggie oil
- β1 teaspoon salt
- β1/2 teaspoon pepper
- β2 tablespoons fish sauce
Instructions

Heat a non-stick pan over medium heat.

Add 1 tablespoon of veggie oil and swirl to coat the pan.

Pour 1/4 cup of rice flour batter into the pan and tilt to evenly coat the bottom.

Cook for 2 minutes or until the edges start to curl.

Add 1/4 cup of shrimp, 1/4 cup of intricately seasoned pork, and 1/4 cup of bean sprouts on one half of the pancake.
