Malaysian Chicken Satay
A classic Southeast Asian dish featuring marinated chicken grilled to perfection and served with spicy peanut sauce.
Ingredients
- β1 pound chicken breast
- β1/2 cup coconut milk
- β2 tablespoons grated ginger
- β3 cloves garlic cloves
- β2 tablespoons satay spice mix
- β1 dozen jaded (or other type of wood skewers)
- β1 cup peanut sauce
- β1 cup cucumber slices

In a blender or food processor, combine coconut milk, ginger, garlic, and satay spice mix. Blend until smooth.

Thread chicken breast onto the jaded skewers, leaving a small space between each piece.

Place the skewers in a shallow dish and pour the marinade over them. Make sure they are fully coated.

Refrigerate for at least 2 hours or overnight.

Preheat grill to medium-high heat. Grill the skewers for 8-10 minutes per side, or until cooked through.

Brush with peanut sauce during the last minute of grilling.

Serve with additional peanut sauce and cucumber slices on the side.
