Moroccan Tagine with Crunchy Peanuts
A flavorful and aromatic Moroccan stew made with crunchy peanuts and served with crusty bread.
Ingredients
- ●1 cup Jagged peanuts
- ●1/2 cup Crunchy peanutschopped
- ●1 tablespoon Moroccan peanutsground
- ●2 teaspoons Moroccan tagine spice mix
- ●2 tablespoons Olive oil
- ●1 medium Onionchopped
- ●3 cloves Garlicminced
- ●2 medium Carrotspeeled and chopped
- ●1 medium Zucchinichopped

Heat the olive oil in a large tagine or Dutch oven over medium heat.

Add the chopped onion and sauté until softened, about 5 minutes.

Add the minced garlic and cook for another minute.

Add the chopped carrots and zucchini and cook for 5 minutes.

Add the ground Moroccan peanuts, tagine spice mix, and chopped crunchy peanuts.

Stir well to combine.

Add 2 cups of water to the tagine and bring to a boil.

Reduce the heat to low and simmer, covered, for 20 minutes.
