Fir and Lentil Wats

Ingredients
- β1 cup red lentilsrinsed and drained
- β1/4 cup fir needlesfresh
- β1 medium onion
- β3 cloves garlic
- β2 inches gingergrated
- β2 tablespoons tomato paste
- β1 teaspoon cumin
- β1 teaspoon coriander
- β1/2 teaspoon salt
- β1/4 teaspoon black pepper

Instructions

Heat oil in a large pan over medium heat.

Add onion and cook until softened, about 5 minutes.

Add garlic and ginger and cook for 1 minute.

Add cumin, coriander, salt, and pepper. Cook for 1 minute.

Add lentils, tomato paste, and 2 cups of water. Bring to a boil.

Reduce heat, cover, and simmer for 20-25 minutes.
