Stir-Fried Aubergine with Baby Bok Choy and Congee
A simple and delicious stir-fry recipe combining the flavors of aubergine, baby bok choy, and congee. Perfect for a quick and easy dinner.
Ingredients
- β1 medium, sliced Jagged Aubergine
- β1 bunch, cleaned and chopped Baby Bok Choy
- β1 cup, cooked Congeepreferably leftover
- β2 tablespoons Soy Sauce
- β2 tablespoons Olive Oil
- β1 clove, minced Garlic
- β1 tablespoon, grated Ginger
- βto taste Salt
Instructions

Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.

Add the minced garlic and grated ginger and stir-fry for 1 minute.

Add the sliced aubergine and stir-fry for 3-4 minutes, or until it starts to soften.

Add the chopped baby bok choy and stir-fry for another 2-3 minutes, or until the vegetables are tender.

Add the cooked congee and stir-fry for 1-2 minutes, breaking up any clumps with a spatula.
