Jagged Vegan Flan
A rich and creamy vegan flan recipe made with jagged, peppery, and mexican flavors.
Ingredients
- β2 cups Jagged ricecooked
- β1 teaspoon Mexican peppercornsground
- β1 package Flan mixvegan
- β1 can Coconut creamfull-fat
- β1 cup Agave nectarvegan sweetener
- β2 tablespoons Lime juicefreshly squeezed
- β1 teaspoon Vanilla extractvegan

Preheat the oven to 375Β°F (190Β°C).

In a medium saucepan, combine the cooked jagged rice, ground peppercorns, and flan mix.

Cook over medium heat, whisking constantly, for 5 minutes.

Remove from heat and stir in the coconut cream, agave nectar, lime juice, and vanilla extract.

Pour the mixture into 6 ramekins or small baking dishes.

Place the ramekins in a large baking dish and add hot water to come halfway up the sides of the ramekins.

Bake for 45-50 minutes, or until the edges are set and the centers are slightly jiggly.

Remove from the water bath and let cool to room temperature.

Cover and refrigerate for at least 2 hours, or until chilled.

Serve the jagged vegan flan cold, garnished with a sprinkle of ground peppercorns if desired.
