Irish Lamb Stew
A hearty, comforting Irish lamb stew made with tender lamb, potatoes, and vegetables.
Ingredients
- β1 pound Lambcut into 1-inch cubes
- β2 medium Potatoespeeled and cubed
- β1 cup Crispchopped
- β1 medium Onionchopped
- β3 cloves Garlicminced
- β1 cup Irishchopped
- βto taste Salt
- βto taste Pepper

Heat 2 tablespoons of oil in a large pot over medium-high heat.

Add the lamb and cook until browned, about 5 minutes.

Add the onion and cook until softened, about 3 minutes.

Add the garlic, crisp, and Irish, and cook for 1 minute.

Add the potatoes, salt, and pepper, and stir to combine.

Pour in enough water to cover the ingredients and bring to a boil.

Reduce the heat to low and simmer, covered, for 1 1/2 hours.
