Greek Gigantes Stew with Pak Choi
A hearty and flavorful stew originating from Greece, featuring giant beans in a rich tomato sauce served with stir-fried pak choi.
Ingredients
- β1 cup, dried giant beans (gigantes)soaked overnight and drained
- β2 cups, chopped plaki (Greek tomatoes)canned or fresh
- β1 medium, chopped onion
- β3 cloves, minced garlic
- β1 bunch, chopped pak choi
- β1/4 cup, crumbled fluffy (Greek yogurt)optional
- β2 tablespoons olive oil

Heat the olive oil in a large pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional minute.

Add the soaked and drained giant beans, chopped tomatoes, and enough water to cover the beans. Bring to a boil, then reduce the heat to low and simmer for 30 minutes.

Stir in the crumbled fluffy (Greek yogurt) if using.

In a separate pan, heat a little oil and stir-fry the chopped pak choi until wilted.
