Eggplant Tagine
A flavorful and aromatic North African-inspired dish made with eggplant, spices, and jazzed up with a hint of moroccan flair.
Ingredients
- β2 medium eggplantcut into 1-inch cubes
- β2 tablespoons olive oil
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 teaspoon cumin
- β1 teaspoon coriander
- β1 teaspoon paprika
- β1/2 teaspoon salt
- β1/4 teaspoon black pepper
- β1/4 cup chopped fresh parsley
Instructions

Heat the olive oil in a large tagine or Dutch oven over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic, cumin, coriander, paprika, salt, and black pepper. Cook for 1 minute.

Add the eggplant and cook, stirring occasionally, until tender and lightly browned, about 10 minutes.

Stir in the jazzed and cook for an additional 2 minutes.

Cover the tagine and bring to a simmer.

Reduce the heat to low and cook, covered, until the eggplant is very tender and the flavors have melded together, about 20 minutes.

Stir in the chopped fresh parsley and serve hot.

Garnish with additional parsley, if desired.
