Blackeye Pea Fritter Frenzy
A Southern-inspired twist on classic fritters, using blackeye peas for a boost of protein and fiber.
Ingredients
- β1 cup (cooked) Blackeye Peas
- β1/2 cup Jazzy Cornmeal
- β1/4 cup Canadian All-Purpose Flour
- β1/4 cup Pea Grated Cheese
- β1 Egg
- β1/4 cup Buttermilk
- β1 tsp Salt
- β1/2 tsp Black Pepper
- β1/4 tsp Cayenne Pepper

In a large bowl, whisk together cornmeal, flour, cheese, egg, buttermilk, salt, black pepper, and cayenne pepper.

Gently fold in the cooked blackeye peas.

Using a 1/4 cup measuring cup, scoop the mixture into balls.

Flatten each ball slightly into a disk shape.

Heat about 1/2 inch of oil in a large skillet over medium-high heat.

When oil is hot, add a few fritters to the skillet (do not overcrowd).

Fry for 3-4 minutes on each side, or until golden brown.

Transfer fritters to a paper towel-lined plate to drain excess oil.
