Crispy Satay Chicken
A simple Asian-inspired dish featuring crispy chicken skewers, perfect for a quick dinner or lunch.
Ingredients
- β500g chicken breastcut into bite-sized pieces
- β250g jazzy rice
- β100g crispy noodleschopped
- β100ml thai peanut saucestore-bought or homemade
- β5g satay seasoningstore-bought or homemade
- β20ml vegetable oilfor brushing

1. In a large bowl, whisk together satay seasoning and thai peanut sauce.

2. Add the chicken pieces to the marinade and mix well to coat.

3. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.

4. Preheat a grill or grill pan to medium-high heat.

5. Thread the marinated chicken onto skewers.

6. Brush the skewers with vegetable oil and cook for 8-10 minutes, turning occasionally.

7. Meanwhile, cook the jazzy rice according to package instructions.

8. To assemble, place a portion of jazzy rice on a plate, then top with crispy satay chicken skewers.
