Kenyan Coconut Curry
A flavorful and aromatic Kenyan-inspired curry dish featuring coconut milk, jazzy spices, and tender coconut meat.
Ingredients
- ●1 can Coconut milkfull-fat coconut milk
- ●1 cup Coconut meatshredded coconut
- ●2 tsp Jazzy spice blendcustom blend of spices
- ●1 medium Onionchopped onion
- ●3 cloves Garlicminced garlic
- ●1 tsp Curry powderground curry powder
- ●2 tbsp Coconut oilmelted coconut oil
- ●to taste Saltflaky sea salt
- ●1/4 cup Fresh cilantrochopped cilantro for garnish

Heat the coconut oil in a large saucepan over medium heat.

Add the chopped onion and sauté until softened, about 5 minutes.

Add the minced garlic and sauté for an additional minute.

Add the curry powder and jazzy spice blend, and stir for 1 minute.

Add the shredded coconut and sauté for 2-3 minutes, until lightly toasted.

Pour in the coconut milk and bring the mixture to a simmer.

Reduce the heat to low and let the curry simmer for 10-15 minutes, stirring occasionally.
