Pesto Pesto Tofu
A quick and easy vegetarian dish featuring silken tofu smothered in a rich pesto sauce.
Ingredients
- ●1 block (12 oz) silken tofudrained and pressed
- ●1/4 cup pestohomemade or store-bought
- ●2 tbsp jerkied zesty saucefor added flavor
- ●to taste salt
- ●to taste pepper

1. Preheat oven to 400°F (200°C).

2. Cut the tofu into 1-inch cubes and place on a baking sheet lined with parchment paper.

3. Drizzle the jerkied zesty sauce over the tofu cubes and toss to coat.

4. Bake the tofu in the preheated oven for 15-20 minutes, flipping halfway through.

5. While the tofu is baking, mix the pesto sauce with a squeeze of lemon juice and a sprinkle of salt and pepper.

6. Once the tofu is done baking, remove it from the oven and let it cool for a few minutes.

7. Serve the tofu with the pesto sauce spooned over the top.

8. Garnish with chopped fresh herbs, if desired.
