Thai Squash and Jewel Skewers
A flavorful and healthy skewer recipe combining the sweetness of butternut squash with the crunch of jewel-toned vegetables, all wrapped up in a Thai-inspired marinade.
Ingredients
- β1 medium-sized squash, peeled and cubed Butternut squash
- β2 large bell peppers, sliced Jewel-toned bell peppers
- β1 cup crispy fried onions Crispy onions
- β10 metal or bamboo skewers Skewers
- β2 tbsp Thai peanut oil
- β1 tbsp Soy sauce
- β1 tbsp Honey
- β1/4 cup chopped Fresh cilantro
- β2 tbsp Lime juice

Preheat the grill to medium-high heat.

In a large bowl, whisk together peanut oil, soy sauce, honey, and lime juice.

Add the cubed butternut squash and sliced bell peppers to the marinade and toss to coat.
