Polish Jewelled Pilchard Gratin

- β1 can (drained and flaked) pilchards
- β1 cup jewelled vegetables (such as bell peppers, carrots, and green beans)jewelled or mixed colours
- β1/2 cup polish rye flouroptional, for a crunchy topping
- β2 tbsp herbal butter (such as parsley and chives mixed with softened butter)
- β1/2 cup gratin cheese (such as cheddar or parmesan)
- βto taste salt
- βto taste black pepper

Preheat oven to 375Β°F (190Β°C).

In a large mixing bowl, combine pilchards, jewelled vegetables, and herbal butter. Season with salt and black pepper to taste.

In a separate bowl, mix polish rye flour and gratin cheese.

Transfer the pilchard mixture to a baking dish and top with the flour and cheese mixture.
