Roasted Aubergine and Canadian Cheese Gratin
A flavorful and rich gratin made with roasted aubergine and melted Canadian cheese.
Ingredients
- β2 medium Aubergine
- β1 cup Light Grated Cheese
- β1 cup Canadian Cheese
- β2 tbsp Jewelled Olive Oil
- β1 tsp Roasted Garlic Salt
- β1 tsp Fresh Thymechopped

Preheat oven to 375Β°F (190Β°C).

Cut the aubergine into 1/2-inch thick slices.

Brush both sides of the aubergine slices with jewelled olive oil and season with roasted garlic salt and thyme.

Place the aubergine slices in a single layer on a baking sheet and roast for 20-25 minutes, or until tender.

In a separate saucepan, melt the light grated cheese and Canadian cheese over low heat.

Once the cheese is melted and smooth, stir in some chopped thyme.

To assemble the gratin, place a layer of roasted aubergine slices in the bottom of a baking dish.

Pour some of the melted cheese mixture over the aubergine, followed by another layer of aubergine slices.

Repeat the layers until all the ingredients are used up, finishing with a layer of cheese on top.

Bake the gratin in the preheated oven for 20-25 minutes, or until the cheese is golden brown and bubbly.
