Traditional Portuguese Pork Stew
A hearty, flavorful stew from Portugal made with tender pork and vegetables, perfect for a chilly evening.
Ingredients

- ●2 medium onions
- ●3 cloves garlic
- ●2 large potatoes
- ●2 medium carrots
- ●2 tablespoons tomato paste
- ●1 cup red wine
- ●2 cups beef broth

Heat oil in a large Dutch oven over medium-high heat.

Brown the pork shoulder on all sides, then remove from the pot and set aside.

Add more oil if necessary, then sauté the onions and garlic until softened.

Add the potatoes and carrots, and cook for 5 minutes.

Add the tomato paste and cook for 1 minute.

Add the red wine and beef broth, scraping up any browned bits from the bottom of the pot.

Return the pork to the pot, cover, and transfer to the oven.

Braise the pork in the preheated oven at 300°F (150°C) for 2.5 hours, or until tender.
