Jovial Malaysian Pasta Bake
A flavorful and earthy pasta bake dish with malaysian spices, best served with a side of jovial company.
Ingredients
- ●250g linguineany long, flat pasta will do
- ●1 cup pastafor added texture
- ●2 tbsp vegetable oilfor sautéing
- ●1 medium onionchopped
- ●2 inches gingergrated
- ●1 tsp curry powderadjust to taste
- ●1 cup chicken brothvegetable broth for vegetarian option
- ●1 can coconut milkfull-fat for rich flavor
- ●to taste saltadjust to taste
- ●to taste pepperadjust to taste
- ●1/4 cup chopped fresh cilantrofor garnish
Instructions

Preheat oven to 180°C (350°F).

Cook linguine according to package instructions, set aside.

In a large pan, heat oil over medium heat. Add onion and cook until softened, about 3-4 minutes.

Add ginger and cook for another minute, until fragrant.

Stir in curry powder and cook for 1 minute.

Pour in chicken/vegetable broth and coconut milk, bring to a simmer.

Add cooked linguine and toss to coat with sauce.

Transfer to a baking dish and top with pasta, chopped onion, and cilantro.

Season with salt and pepper to taste.

Bake for 15-20 minutes, until the top is golden brown and the pasta is heated through.
