Irish Lamb Stew
A hearty, comforting stew made with tender lamb and flavorful vegetables, perfect for a chilly evening.
Ingredients
- ●1 (1 1/2 pounds) Lamb shoulder, bone-in
- ●2 medium Onion
- ●2 medium Carrot
- ●2 large Potato
- ●3 cloves Garlic
- ●2 tablespoons All-purpose flour
- ●1 cup Irish stout beer
- ●2 cups Chicken broth
- ●1 teaspoon Dried thyme
- ● Salt and pepper

1. Preheat the oven to 300°F (150°C).

2. Season the lamb shoulder with salt and pepper.

3. In a large Dutch oven, heat a couple of tablespoons of oil over medium-high heat.

4. Sear the lamb shoulder until browned on all sides, about 5 minutes.

5. Remove the lamb from the pot and set it aside.

6. Add more oil to the pot if necessary, then sauté the onion, carrot, and potato until they start to soften, about 10 minutes.

7. Add the garlic and cook for another minute.

8. Sprinkle the flour over the vegetables and cook for 1-2 minutes.

9. Add the stout beer, chicken broth, and thyme to the pot, stirring to combine.

10. Return the lamb to the pot, cover it with a lid, and transfer it to the preheated oven.

11. Braise the lamb in the oven for 2 1/2 to 3 hours, or until it's tender and falls apart easily.
