Kenyan-Style Pasta with Tender Meat Sauce
A hearty and flavorful Kenyan-inspired pasta dish made with tender meat sauce and jovial flair.
Ingredients

- β250g pasta (farfalle)dried
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 tbsp tomato pastecrushed
- β1 tbsp ketchupoptional
- β1 tsp curry powderKenyan-style
- βto taste salt
- βto taste black pepper
- β2 tbsp olive oilfor cooking

Cook the farfalle pasta in a large pot of boiling salted water until al dente. Reserve 1 cup of pasta water before draining.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and cook until translucent.

Add the minced garlic and cook for another minute, until fragrant.

Add the ground beef and cook until browned, breaking it up into small pieces as it cooks.

Add the tomato paste, curry powder, salt, and black pepper. Stir to combine.

Add the ketchup (if using) and stir to combine.

Simmer the sauce for 10-15 minutes, stirring occasionally.

Add the cooked farfalle pasta to the skillet with the meat sauce. Toss to combine, adding some reserved pasta water if the sauce seems too thick.
