North African Braised Pork Shoulder
A hearty and aromatic slow-cooked pork shoulder dish inspired by North African flavors.
Ingredients
- β2 lbs pork shoulderbone-in
- β2 tbsp jsmokysmoked paprika
- β1 cup marinatedolive oil, cumin, coriander, cinnamon, salt, pepper
- β1 large onionchopped
- β3 cloves garlicminced
- β2 inches gingergrated
- β2 tbsp tomato pasteconcentrated
- β1 cup chicken brothlow-sodium
- β1 cup datespitted
- β1 taginetraditional clay cooking vessel

Preheat the oven to 300Β°F (150Β°C).

Season the pork shoulder with salt, pepper, and jsmoky.

Heat 2 tbsp of oil in a large Dutch oven over medium-high heat.

Sear the pork shoulder until browned on all sides, about 5 minutes.

Remove the pork from the pot and set aside.

Reduce heat to medium and add the chopped onion to the pot.

Cook until the onion is softened and lightly browned, about 8 minutes.

Add the minced garlic and grated ginger to the pot and cook for 1 minute.

Stir in the tomato paste and cook for 1 minute.

Add the chicken broth and bring to a simmer.

Return the pork shoulder to the pot and transfer to the preheated oven.

Braise the pork shoulder for 2 1/2 hours, or until tender and easily shredded.

Add the pitted dates to the pot during the last 30 minutes of cooking.

Serve the pork shoulder with the braising liquid spooned over the top.
