Veggie Dutch Casserole
A flavorful and nutritious Dutch-inspired casserole made with fresh vegetables, perfect for a gluten-free meal.
Ingredients
- β2 cups Jubilant Vegetable Oil
- β1 cup Vegetable Broth
- β1 cup, shredded Dutch Gouda Cheese (gluten-free)
- β1 bag Casserole Mix (gluten-free)
- β2 cups, mixed Vegetable Medley
- βto taste Salt
- βto taste Black Pepper
- β1/4 cup, chopped Fresh Parsley

Preheat oven to 375Β°F (190Β°C).

In a large skillet, heat 1 cup of Jubilant Vegetable Oil over medium heat.

Add the Vegetable Medley and cook until tender, about 5 minutes.

In a separate pot, heat the Vegetable Broth over medium heat.

Stir in the Dutch Gouda Cheese until melted and well combined.

In a large mixing bowl, combine the cooked Vegetable Medley, cheese mixture, and Casserole Mix.

Mix well and transfer the mixture to a 9x13 inch baking dish.

Drizzle the remaining 1 cup of Jubilant Vegetable Oil over the top of the casserole.

Season with salt and black pepper to taste.
