Fabada Asturiana with Spanish Beans
A hearty Spanish stew originating from Asturias, made with fabada beans, chorizo, and morcilla.
Ingredients
- ●1 cup, dried Fabada Asturiana beans
- ●2 sausages Spanish chorizo
- ●2 sausages Morcilla (Spanish blood sausage)
- ●2 tablespoons Olive oil
- ●1 medium Onion
- ●3 cloves Garlic
- ●1 cup Red wine
- ●4 cups Water
- ●1 teaspoon Pimentón (smoked paprika)

Heat the olive oil in a large pot over medium heat.

Add the diced onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the sliced chorizo and morcilla and cook, breaking up the meat with a spoon, until browned, about 5 minutes.

Add the fabada beans, red wine, water, and smoked paprika. Stir to combine.

Bring the stew to a boil, then reduce the heat to low and simmer, covered, for 1 hour.

Season the stew with salt and pepper to taste.

Serve the Fabada Asturiana hot, garnished with chopped fresh parsley or thyme, if desired.
