Spanish Prawn Paella
A classic Spanish dish from the Valencia region, made with succulent prawns, juicy saffron-infused rice, and a mediterranean twist.

Ingredients
- ●1 bag Prawns (400g)fresh or frozen, thawed
- ●1 cup Jucy Spanish Rice (250g)preferably day-old rice
- ●1 cup Mediterranean Vegetable Mix (200g)such as bell peppers, zucchini, and cherry tomatoes
- ●2 teaspoons Paella Seasoning Mix (20g)store-bought or homemade
- ●1 tablespoon Extra Virgin Olive Oil (20ml)for cooking
- ●1 teaspoon Salt (5g)to taste
- ●1 teaspoon Black Pepper (5g)to taste
- ●4 Lemon Wedges (4)optional

Instructions

Heat olive oil in a large paella pan over medium heat.

Add paella seasoning mix and sauté for 1 minute.

Add Mediterranean vegetable mix and cook for 3-4 minutes.

Add prawns and cook for 2-3 minutes per side.

Stir in Jucy Spanish rice and cook for 2-3 minutes.

Add 500ml of water and bring to a simmer.

Reduce heat to low and cook for 15-20 minutes or until the rice is tender.
