Uruguayan-Style Beef Stew
A hearty beef stew originating from Uruguay, made with tender chunks of beef and flavorful vegetables.
Ingredients
- β1.5 lbs Uruguayan beef (churrasco or flank steak)Cut into 1-inch cubes
- β2 cups Juicy beef brothHomemade or store-bought
- β2 tbsp ButterUnsalted
- β1 medium OnionDiced
- β3 cloves GarlicMinced
- β1 medium Red bell pepperDiced
- β2 tbsp Tomato pasteOptional
- β1/4 cup Fresh parsleyChopped (for garnish)
- β Salt and pepperTo taste
- β2 cups StewFor serving

Heat butter in a large Dutch oven over medium-high heat.

Add beef cubes and cook until browned on all sides, about 5 minutes.

Remove browned beef from pot and set aside.

Add onion, garlic, and red bell pepper to pot; cook until vegetables are tender, about 5 minutes.

Add tomato paste (if using) and cook for 1 minute.

Add beef broth and bring to a boil.

Return beef to pot, cover, and transfer to the oven.

Braise for 2-3 hours, or until beef is tender.
