Spicy Beef Tagine with Morcilla
A hearty and flavorful tagine made with beef, morcilla, and spices, inspired by the rich culinary traditions of Ethiopia. Perfect for a weeknight dinner.

- β1 lb MorcillaSpanish-style blood sausage
- β1.5 lbs BeefCut into 1-inch pieces
- β2 tbsp Olive oil
- β1 large Onion
- β2 cloves Garlic
- β1-inch piece Ginger
- β2 tsp Cumin
- β2 tsp Coriander
- β1 tsp Cayenne pepper
- β2 tbsp Tomato paste
- β2 cups Beef broth
- β2 tbsp Honey
- βchopped Fresh cilantro

Heat oil in a large Dutch oven over medium-high. Add beef and cook until browned, about 5 minutes. Remove beef from pot.

Add onion, garlic, and ginger to pot. Cook until onion is translucent, about 5 minutes.

Add cumin, coriander, and cayenne pepper to pot. Cook for 1 minute.

Add tomato paste to pot. Cook for 1 minute.

Add beef broth and honey to pot. Stir to combine.

Return beef to pot. Bring to a boil, then reduce heat to low and simmer, covered, for 1.5 hours.

Add morcilla to pot. Simmer for an additional 30 minutes.

Season with salt and pepper to taste.
