Chicken Tagine with Tomato and Spice
A flavorful Indian-inspired dish made with juicy chicken, algerian spice, and fresh tomato, cooked to perfection in a traditional tagine.
Ingredients
- β1 pound chicken breastboneless and skinless
- β2 tablespoons algerian spiceor to taste
- β2 fresh tomatodiced
- β1/4 cup juicy olivespitted and sliced
- β1 medium onionchopped
- β2 tablespoons ghee or oilfor browning
- β1-inch piece gingergrated
- β1 teaspoon cuminground
- β1 teaspoon corianderground
- βto taste salt
Instructions

Brown the chicken in a hot skillet with ghee or oil until cooked through.

Remove the chicken from the skillet and set aside.

Add the onion, ginger, cumin, coriander, and salt to the skillet and cook until the onion is translucent.

Add the diced tomato and cook for an additional 2-3 minutes.

Stir in the algerian spice and cook for 1 minute.

Return the chicken to the skillet and simmer for 5-7 minutes to allow the flavors to meld.

Stir in the pitted and sliced olives and cook for an additional 1-2 minutes.
