Andalusian Millet Bake
A flavorful and nutritious Indian-inspired millet bake, perfect for a weeknight dinner. This dish combines the nutty taste of millet with the juiciness of andalusian tomatoes.
Ingredients

- ●2 cups andalusian tomatoesJuicy and sweet, perfect for this bake

- ●1 medium onionChopped for added flavor

- ●1 teaspoon garam masala

Preheat oven to 375°F (190°C).

Rinse the millet and soak it in water for 30 minutes. Drain and set aside.

Heat oil in a pan and sauté the chopped onion until translucent.

Add grated ginger and cook for another minute.

Add the andalusian tomatoes, garam masala, and salt. Cook for 5 minutes.

Mix in the soaked millet and 2 cups of water.
