Argentinian Haddock Gratin
A simple, flavorful dish from Argentina, featuring pan-seared haddock topped with a creamy gratin.
Ingredients

- β1 cup gratinstore-bought or homemade
- β2 medium juicy tomatoesdiced
- β1 medium oniondiced
- β3 cloves garlicminced
- β2 tbsp lemon juicefreshly squeezed
- β1/2 cup parmesan cheesegrated
- β2 tbsp olive oilfor cooking

Preheat the oven to 400Β°F (200Β°C).

Season the haddock fillets with salt and pepper.

Heat 1 tablespoon of olive oil in an oven-safe skillet over medium-high heat.

Add the haddock fillets and cook for 2-3 minutes on each side, until browned.

Transfer the skillet to the preheated oven and bake for 8-10 minutes, until cooked through.

While the haddock is baking, mix the diced tomatoes, onion, garlic, and lemon juice in a bowl.
