Classic British Chicken Casserole
A hearty and comforting casserole filled with tender chicken and vegetables, inspired by traditional British cuisine.
Ingredients
- β1 pound Boneless, skinless chicken breastCut into 1-inch pieces
- β1 cup MushroomsSliced
- β2 medium CarrotsSliced
- β1 large OnionsChopped
- β2 tablespoons All-purpose flour
- β1 cup Chicken broth
- β1/2 cup Heavy cream
- β1 can (14.5 oz) Diced tomatoes
- βto taste Salt
- βto taste Black pepper
- β1 tablespoon Fresh parsleyChopped (optional)

Preheat oven to 375Β°F (190Β°C).

In a large skillet, heat 2 tablespoons of oil over medium-high heat. Add the chicken and cook until browned, about 5-7 minutes.

Remove the chicken from the skillet and set aside.

In the same skillet, add the sliced mushrooms, carrots, and onions. Cook until the vegetables are tender, about 5-7 minutes.

Sprinkle the flour over the vegetables and cook for 1 minute.

Gradually stir in the chicken broth and bring to a boil.

Return the chicken to the skillet and stir in the heavy cream and diced tomatoes.

Transfer the casserole mixture to a 9x13-inch baking dish.

Cover the dish with aluminum foil and bake for 25-30 minutes.
