Mexican Fish Tacos
A twist on traditional British fish and chips, this Mexican-inspired dish features cod in a crispy taco shell.
Ingredients

- β8 corn tortillascorn
- β1/2 cup vegetable oilfor frying
- β1 bag chips (tortilla chips)for serving
- β2 tablespoons lime juicefresh
- β1/4 cup chopped cilantrofresh
- β1 medium diced onionoptional
- β1 medium sliced radishesoptional
- β1 cup Mexican cremasour cream alternative

Heat 1/4 inch of vegetable oil in a large skillet over medium-high heat.

Dredge cod fillets in flour and fry for 3-4 minutes on each side, or until golden brown.

Drain cod on paper towels and season with salt and pepper.

Warm corn tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

Assemble tacos by placing a piece of cod on a tortilla, then topping with a spoonful of Mexican crema, diced onion, sliced radishes, and a sprinkle of cilantro.
