Roasted Lamb with Herbs
A traditional British roast lamb dish made with fresh herbs and a hint of garlic. Perfect for a special occasion or a Sunday roast.
Ingredients
- ●1.5 kg Lamb shoulderbone-in
- ●2 sprigs Fresh thyme
- ●2 sprigs Fresh rosemary
- ●3 cloves Garlic
- ●2 tablespoons Olive oil
- ●1 teaspoon Salt
- ●1 teaspoon Black pepper

Preheat the oven to 200°C (400°F).

Season the lamb with salt and black pepper.

Heat the olive oil in a large oven-safe pan over medium-high heat.

Sear the lamb on all sides until browned, about 2-3 minutes per side.

Transfer the lamb to the preheated oven and roast for 20 minutes.

Reduce the oven temperature to 180°C (350°F) and continue roasting for another 20-25 minutes, or until the lamb reaches your desired level of doneness.

Remove the lamb from the oven and let it rest for 10 minutes before slicing and serving.

Meanwhile, mix the thyme, rosemary, and garlic in a small bowl.

Rub the herb mixture all over the lamb, making sure to get some under the skin as well.

Return the lamb to the oven and roast for an additional 5-10 minutes, or until the herbs are fragrant and the lamb is cooked through.
