Croatian Oxtail Stew
A hearty and flavorful stew from Croatia, made with tender oxtail and a rich tomato-based broth.
Ingredients

- β2 medium onions
- β3 cloves garlic
- β4 medium carrots
- β2 large potatoes
- β4 cups beef broth
- β2 tbsp tomato paste
- β1 cup red wine
- β2 bay leaves
- β1 tsp thyme

Heat oil in a large Dutch oven over medium-high heat.

Add oxtail and brown on all sides, about 5 minutes.

Remove oxtail and set aside.

Add onions and garlic and cook until softened, about 5 minutes.

Add carrots and potatoes and cook for 5 minutes.

Add beef broth, tomato paste, red wine, bay leaves, and thyme.

Return oxtail to the pot and bring to a boil.

Cover and transfer to the oven.

Braise for 2 1/2 hours, or until oxtail is tender.
