Croatian Style Braised Lamb Stew
A hearty and flavorful stew originating from Croatia, made with tender lamb, juicy vegetables, and rich spices.
Ingredients
- β1.5 lbs Lamb Shoulderbone-in, cut into 2-inch pieces
- β2 medium Onionschopped
- β3 cloves Garlicminced
- β4 medium Carrotspeeled, chopped
- β2 large Potatoespeeled, chopped
- β1 cup Red Winedry
- β2 cups Beef Brothlow-sodium
- β2 tbsp Tomato Pastecrushed
- β1 tsp Dried Thymedried
- β1 tsp Saltto taste
- β1 tsp Black Pepperto taste

Preheat the oven to 300Β°F (150Β°C).

Season the lamb with salt and black pepper.

Heat oil in a large Dutch oven over medium-high heat.

Sear the lamb until browned on all sides, about 5 minutes.

Remove the lamb from the pot and set aside.

Reduce the heat to medium and add the chopped onions.

Cook until the onions are softened and lightly browned, about 8 minutes.

Add the minced garlic and cook for 1 minute.

Add the chopped carrots and potatoes, cook for 5 minutes.

Add the red wine, beef broth, tomato paste, and dried thyme.

Stir to combine, scraping up any browned bits from the bottom of the pot.

Return the lamb to the pot, cover with a lid.

Transfer the pot to the preheated oven and braise for 2 1/2 hours, or until the lamb is tender.
