Thai-Style Stir Fry
A quick and flavorful Thai-style stir fry made with juicy chicken, earthy vegetables, and a hint of Thai spices. This recipe is perfect for a weeknight dinner.
Ingredients
- β1 lb chicken breastcut into bite-sized pieces
- β2 tbsp Thai red curry pastestore-bought or homemade
- β2 tbsp vegetable oilfor stir-frying
- β1 onionsliced
- β1 bell peppersliced
- β1 cup snow peasfresh or frozen
- β1/4 cup basilchopped fresh

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the chicken to the skillet and cook until browned, about 5-7 minutes.

Remove the chicken from the skillet and set aside.

Add the remaining 1 tablespoon of vegetable oil to the skillet.

Add the onion and bell pepper to the skillet and cook until they start to soften, about 3-4 minutes.
