Thai Lamb Satay Skewers
A Thai-inspired appetizer featuring marinated lamb chunks grilled to perfection on skewers. Serve with a side of peanut sauce for dipping.
Ingredients
- β1 pound Lamb shouldercut into 1-inch cubes
- β2 tablespoons Thai red curry paste
- β1/4 cup Coconut milkfull-fat
- β1 tablespoon Fish sauce
- β1 tablespoon Brown sugar
- β2 tablespoons Lime juice
- β1/4 cup Vegetable oil
- β10-12 Wooden skewers
- β1 cup Peanutschopped (for garnish)
- β2 tablespoons Peanut butter

1. In a blender or food processor, combine curry paste, coconut milk, fish sauce, brown sugar, and lime juice. Blend until smooth.

2. Add the lamb cubes to the marinade and mix until coated. Cover and refrigerate for at least 2 hours or overnight.

3. Preheat grill to medium-high heat. Thread the marinated lamb onto the skewers, leaving a small space between each piece.

4. Brush the grill with vegetable oil to prevent sticking. Grill the lamb skewers for 8-10 minutes, turning occasionally, or until cooked to your desired level of doneness.

5. Meanwhile, prepare the peanut sauce by blending the peanut butter, 2 tablespoons of water, and 1 tablespoon of lime juice until smooth. Season with salt to taste.

6. Serve the lamb skewers hot with a side of peanut sauce for dipping. Garnish with chopped peanuts and fresh cilantro (if desired).
