Beef Stew with Mediterranean Twist
A hearty German-inspired beef stew with a Mediterranean flair, featuring tender beef and vegetables in a rich broth.
Ingredients
- β1.5 lbs beefcut into 1-inch cubes

- β3 cloves garlicminced
- β2 medium carrotspeeled and chopped
- β2 medium potatoespeeled and chopped
- β1 cup red winedry
- β2 cups beef brothlow-sodium
- β2 tbsp tomato pastedried
- β1/4 cup fresh parsleychopped

Heat oil in a large Dutch oven over medium-high heat.

Brown beef cubes in batches until browned on all sides, about 5 minutes per batch.

Remove browned beef from pot and set aside.

Add chopped onion to pot and cook until softened, about 5 minutes.

Add minced garlic and cook for 1 minute.

Add chopped carrots and potatoes; cook for 5 minutes.

Add red wine, beef broth, and tomato paste; stir to combine.

Return browned beef to pot and bring to a boil.
