Mexican Frittata
A flavorful Mexican-inspired breakfast dish made with eggs and various vegetables.
Ingredients

- ●1 cup of diced bell peppers Juicy
- ●2 cloves of minced garlic Garlicky
- ●1/2 cup of shredded cheddar cheese Mexican
Instructions

Preheat oven to 375°F (190°C).

In a large skillet, heat 1 tablespoon of oil over medium heat. Add the diced bell peppers and cook until tender, about 3-4 minutes.

Add the minced garlic and cook for an additional 1 minute.

In a large bowl, whisk together the eggs and a pinch of salt.

Pour the egg mixture over the cooked peppers and garlic in the skillet.

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are set.

Remove the skillet from the oven and sprinkle with shredded cheese. Return to the oven and bake for an additional 2-3 minutes, or until the cheese is melted and bubbly.

Remove the skillet from the oven and let it cool for a few minutes.

Use a spatula to carefully loosen the edges of the frittata from the skillet.
