Blackeye Curry with Peas and Rajma

- β1 cup (dried) blackeye peassoaked overnight and drained
- β1 cup (cooked) rajmause store-bought or homemade
- β1 cup (fresh) peas
- β2 tsp curry powder
- β2 tbsp coconut oil
- β1 medium onion
- β1 inch ginger
- β2 cloves garlic
- βto taste salt
- β2 cups water

Instructions

Heat oil in a pan over medium heat.

Add onion, ginger, and garlic. Cook until onion is translucent.

Add curry powder and cook for 1 minute.
