Braised Kenyan Beef with Raspberry Glaze
A sweet and tangy take on a classic braised beef dish, featuring the rich flavors of Kenya. Serve with a side of roasted vegetables for a hearty meal.
Ingredients
- β1 lb Kenyan beef (1 pound)
- β1 medium Onion (1 medium)
- β2 cloves Garlic (2 cloves)
- β1 cup Raspberries (1 cup)
- β1 cup Braising liquid (beef broth and red wine)
- β1 tbsp Brown sugar (1 tablespoon)
- β Salt and pepper (to taste)

Preheat oven to 300Β°F (150Β°C). Season beef with salt and pepper.

Heat oil in a Dutch oven over medium-high heat. Sear beef until browned on all sides, about 2-3 minutes per side.

Remove beef from pot and set aside. Add onion and garlic to pot and cook until softened, about 5 minutes.

Add braising liquid and brown sugar to pot, scraping up any browned bits from the bottom.

Return beef to pot and bring to a boil. Cover and transfer to the preheated oven.

Braise for 2 1/2 to 3 hours, or until beef is tender.

While beef is braising, mix raspberries with a little bit of water to create a glaze.

After 2 1/2 hours of braising, brush the raspberry glaze over the beef and continue to braise for another 30 minutes.

Remove beef from pot and let rest for 10 minutes before slicing and serving.
