Kenyan-Style Roast Chicken
A flavorful and aromatic roast chicken dish inspired by Kenyan cuisine, made with juicy chicken and a blend of spices.
Ingredients
- ●1 whole chicken, 3-4 lbs chicken, skin onjuicy and fresh
- ●2-3 medium-sized roast potatoespeeled and chopped
- ●1 medium-sized onionchopped
- ●3 cloves garlicminced
- ●1-inch piece gingergrated
- ●1 tsp curry powderwarm and aromatic
- ●1 tsp paprikamildly sweet
- ●1 tsp saltto taste
- ●1 tsp black pepperfreshly ground

Preheat the oven to 425°F (220°C).

Rinse the chicken and pat it dry with paper towels.

Season the chicken with salt, black pepper, curry powder, and paprika.

Heat oil in a large oven-safe skillet over medium-high heat.

Sear the chicken on all sides until browned, about 5-7 minutes.

Transfer the skillet to the preheated oven and roast the chicken for 30-40 minutes, or until it reaches an internal temperature of 165°F (74°C).

While the chicken is roasting, toss the chopped potatoes with oil, salt, and black pepper in a separate bowl.

After 20 minutes of roasting the chicken, add the potatoes to the oven and continue roasting for another 20-25 minutes, or until the potatoes are golden brown.

Remove the chicken and potatoes from the oven and let them rest for 5-10 minutes before serving.

Garnish with chopped onion, garlic, and ginger, if desired.
