Malaysian Curry Tofu Stir Fry
A flavorful and spicy stir fry made with crispy tofu, juicy vegetables, and a rich Malaysian curry sauce.
Ingredients
- β1 block (14 oz) firm tofupressed and cut into bite-sized pieces
- β1 juicy red bell peppersliced
- β2 tbsp curry pasteMalaysian-style
- β2 tbsp coconut oilfor frying
- β1 tsp fish sauceoptional
- β1 tsp lime juicefreshly squeezed
- β1/4 cup chopped fresh cilantrofor garnish

Heat 1 tablespoon of coconut oil in a large skillet or wok over medium-high heat.

Add the tofu and cook until golden brown and crispy on all sides, about 5-7 minutes.

Remove the tofu from the skillet and set aside.

Add the remaining 1 tablespoon of coconut oil to the skillet.

Add the sliced red bell pepper and cook until tender, about 3-4 minutes.

Add the curry paste and cook for 1 minute, stirring constantly.

Add the cooked tofu back into the skillet and stir to combine with the curry paste.

Add the fish sauce and lime juice, and stir to combine.

Cook for an additional 1-2 minutes, or until the sauce has thickened.
