Lamb Stew
A hearty and flavorful stew made with tender lamb, juicy vegetables, and aromatic spices.
Ingredients
- β1 pound Lamb shouldercut into 1-inch pieces
- β1 medium Onionchopped
- β3 cloves Garlicminced
- β2 medium Carrotspeeled and chopped
- β2 medium Potatoespeeled and chopped
- β2 tablespoons Tomato pasteoptional
- β1 teaspoon Cuminground
- β1 teaspoon Paprikasweet
- β1 teaspoon Saltto taste
- β1/2 teaspoon Black pepperto taste

Heat oil in a large Dutch oven over medium-high heat.

Brown the lamb on all sides, about 5 minutes. Remove from pot and set aside.

Add the onion and garlic to the pot and cook until the onion is softened, about 5 minutes.

Add the carrots and potatoes to the pot and cook for 5 minutes.

Add the cumin, paprika, salt, and black pepper to the pot and stir to combine.

Add the lamb back to the pot, along with the tomato paste if using.

Pour in enough water to cover the lamb and vegetables.

Bring to a boil, then reduce heat to low and simmer, covered, for 1 1/2 hours, or until the lamb is tender.

Serve hot, garnished with fresh parsley if desired.
