Russian Meat Pancakes

1. Preheat a non-stick skillet or griddle over medium heat.

2. In a large bowl, combine ground meat, flour, eggs, milk, breadcrumbs, onion, salt, and black pepper. Mix well with your hands until just combined.

3. Using a 1/4 cup measuring cup, scoop the meat mixture onto the skillet or griddle.

4. Cook the pancakes for 4-5 minutes on the first side, until the edges start to dry and the surface is no longer moist.
