Slovakian Pork Stew
A hearty Slovakian-inspired stew made with tender pork and juicy vegetables.
Ingredients
- β1.5 pounds pork shoulder
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 medium carrotpeeled and chopped
- β2 large potatopeeled and chopped
- β8 oz mushroomsliced
- β2 tbsp tomato paste
- β2 cups beef broth
- β1 tsp slovakian paprika
Instructions

Heat oil in a large Dutch oven over medium-high heat.

Add pork and cook until browned, about 5 minutes. Remove from pot and set aside.

Add onion and garlic to pot and cook until softened, about 5 minutes.

Add carrot and potato to pot and cook for 5 minutes.

Add mushroom to pot and cook until tender, about 5 minutes.

Add tomato paste, beef broth, and paprika to pot. Stir to combine.

Return pork to pot and bring to a boil.

Reduce heat to low and simmer, covered, until pork is tender, about 2 hours.

Season with salt and pepper to taste.

Serve hot, garnished with chopped fresh parsley.
