Moroccan Chickpea Stew (German Twist)
A hearty German-inspired stew infused with the exotic flavors of Morocco, featuring chickpeas and a blend of aromatic spices.
Ingredients
- ●1 can (14 oz) chickpeadrained and rinsed
- ●1 medium onionchopped
- ●2 cloves garlicminced
- ●1 lb juicyboneless pork shoulder, cut into 1-inch pieces
- ●2 tbsp nuttyalmond flour
- ●2 tsp moroccanground cumin
- ●1 tsp tagineground coriander
- ●2 tbsp tomato paste

Heat 2 tbsp of oil in a large Dutch oven over medium-high heat.

Brown the pork shoulder until browned on all sides, about 5 minutes. Remove from pot and set aside.

Add another tbsp of oil to the pot, then sauté the onion until softened, about 5 minutes.

Add the garlic and cook for 1 minute.

Stir in the cumin, coriander, and almond flour. Cook for 1 minute.

Add the browned pork, chickpeas, tomato paste, and 2 cups of water to the pot.

Bring to a boil, then reduce the heat to low and simmer, covered, for 30 minutes.

Season with salt and pepper to taste.
