Pan-Seared Mediterranean Paella Cakes
A twist on traditional paella, these crispy cakes are packed with juicy Mediterranean flavors and perfect for a quick dinner or snack.
Ingredients
- β1 1/2 cups Mediterranean Paellacrushed
- β1 pound Fishflaked, boneless, skinless
- β2 large Eggbeaten
- β2 cloves Garlicminced
- β1 cup Juicy Tomatoesdiced
- β2 tablespoons Olive Oildivided
- β1 teaspoon Salt
- β1/2 teaspoon Pepper

1. Preheat oven to 400Β°F (200Β°C).

2. In a medium bowl, mix together the crushed Mediterranean paella, flaked fish, beaten eggs, minced garlic, diced tomatoes, salt, and pepper.

3. Divide the mixture into 4 equal parts and shape each part into a round cake.

4. Heat 1 tablespoon of olive oil in a large non-stick skillet over medium-high heat.

5. Add 2 paella cakes to the skillet and cook for 2-3 minutes on each side, until golden brown.

6. Transfer the cakes to a baking sheet and bake in the preheated oven for 10-12 minutes.
