Kenyan Braised Guanciale Stew
A hearty, flavorful stew made with guanciale, juicy beef, and spices inspired by Kenyan cuisine.
Ingredients

- β2 pounds beef stew meat
- β1 medium onion
- β3 cloves garlic
- β2 inches ginger
- β2 tablespoons tomato paste
- β2 cups beef broth
- β1 cup water
- β1 teaspoon curry powder
- β1 teaspoon cumin
- β1 teaspoon salt
- β1/2 teaspoon black pepper

Season the beef with salt and black pepper.

Heat the guanciale in a large Dutch oven over medium-high heat until crispy.

Add the onion, garlic, and ginger to the pot and cook until the onion is translucent.
