Stir-Fried Aubergine with Jamaican Jerk Chicken
A flavorful and spicy Chinese-inspired dish featuring juicy chicken and tender aubergine.
Ingredients
- β1.5 lbs Jamaican Jerk Chicken Breasts
- β2 medium Baby Aubergine
- β1/4 cup Roasted Peanutschopped
- β1 cup Jasmine Riceuncooked
- β2 tbsp Soy Sauce
- β1 tsp Honey
- β2 cloves Garlicminced
- β1 tsp Gingergrated
- β1/4 tsp Red Pepper Flakes

Heat 1 tablespoon of oil in a large skillet over medium-high heat.

Add the chicken to the skillet and cook until browned, about 5-6 minutes.

Remove the chicken from the skillet and set aside.

Add the remaining 1 tablespoon of oil to the skillet and add the aubergine.

Cook the aubergine until tender, about 3-4 minutes.

Add the roasted peanuts, soy sauce, honey, garlic, and ginger to the skillet.

Return the chicken to the skillet and stir to combine.
