Syrian Roast Lamb
A flavorful and aromatic Syrian-style roast lamb recipe, perfect for special occasions.
Ingredients
- β1.5 kg lamb shoulderask for the bone-in version
- β2 tbsp olive oil
- β2 minced onionabout 1 cup
- β3 cloves minced garlic
- β1 tsp allspiceground
- β1 tsp cuminground
- β1 tsp paprikaground
- β1 tsp saltto taste
- β1 tsp black pepperto taste
- β2 tbsp lemon juice

Preheat oven to 160Β°C (325Β°F).

Rinse the lamb shoulder and pat dry with paper towels.

Season the lamb with salt, black pepper, allspice, cumin, and paprika.

Heat the olive oil in a large skillet over medium-high heat.

Sear the lamb on all sides until browned, about 5 minutes. Remove from heat.

Transfer the lamb to a large roasting pan, fat side up.

In the same skillet, cook the minced onion until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Pour the cooked onion mixture over the lamb, then sprinkle with lemon juice.
